HOMEMADE Christmas pudding crumpets

This works amazingly well - much lighter than its suet-ridden inspiration.

Preparation: 5 minutes Serves: 4 crumpets
Cooking: 10 minutes Home-made
Ingredients Quantity (metric) Quantity (imperial)
Raisins 2 tbsp 2 tbsp
Fresh ginger (peeled and finely chopped) 1 tbsp 1 tbsp
Candied peel (finely chopped) 2 tbsp 2 tbsp
Orange zest 1 tsp 1 tsp
Soft dark brown sugar 2 tsp 2 tsp
Dark rum 1 tbsp 1 tbsp

     

    • Chop the ginger and candied peel, grate the orange zest, then mix all the ingredients with the crumpet batter before cooking. 
    • Needless to say, the crumpets work well with a massive dollop of brandy butter.
