Crumpets with Kippers

How did we not think of this sooner!?

Breakfast doesn't get more British than this!

Preparation: 10 minutes Serves: 4 crumpets
Cooking: 10 minutes Cold-buttered crumpets

Kippers 250 g 8.8 oz
Fresh chives (chopped finely) 4 tsp 4 tsp
Butter 15 g 0.5 oz
Salt and pepper Not too little Not too much

Method

      The kippers

      • Breaking with poaching tradition, we are grillers in the Crumpetman household. They take about 10 minutes under a medium-hot grill, 5 minutes skin up, 5 minutes skin down. We like to add a little butter, salt and pepper about two minutes from the end.
      • The only part of the kippers required for this recipe is the flesh, so the preparation time in this recipe is to remove the skin, dark flesh and as many bones as you can manage.

      • Lay on the kipper fillets, sprinkle over the chopped chives, and tuck in!
